 Golden Harvest Pork Tenderloin

Ingredients: 2 lbs. pork tenderloin 1 medium sweet onion 1 Granny Smith apple 1/2 lb. sweet potato 1/4 small head purple cabbage 1/2 cup flour Salt and pepper to taste 2 Tbs. olive oil or butter 1/4 cup each beef and chicken bouillon 1/2 tsp. cinnamon 1/2 tsp. allspice 1-1/2 Tbs. light or dark brown sugar 1/4 lb. sliced bacon Salt and pepper to taste Preparation: Slice 2 pounds of pork tenderloin into 1-inch medallions. Flatten gently into shape with hand or side of knife. Tenderloin ends can be butterflied to maintain uniform shape and thickness. Wash 1 medium sweet potato and cut in half. Thinly slice the sweet potato without peeling. This helps keep potato together when cooking it. Core 1 Granny Smith apple and slice thinly. Core and shred 1/4 head of red cabbage and set aside. Heat 2 tablespoons olive oil or butter over medium high heat. Season 1/2 cup flour with salt and pepper to taste. Dredge pork medallions in flour and saute in pan. Cook medallions until they are golden brown on both sides. Remove from pan and set aside. Cook 1/4 pound of sliced bacon in pan until crisp and fat is rendered. Add sliced sweet potato and apple to the pan. Cook about 2 minutes. Add 1 medium sweet onion. Cook another 1-2 minutes. Deglaze the pan with mixture of 1/4 cup beef and 1/4 cup chicken stock. Cook over medium to high heat about 5 minutes, or until the sweet potato is just tender. Add cabbage, 1-1/2 tablespoons light or dark brown sugar, 1/2 teaspoon cinnamon, 1/2 teaspoon allspice, salt and pepper to taste, to the pan. Heat through until cabbage is just wilted and serve over medallions.
