Ingredients: 3 cups water 1 cup sugar 4 apples 2 Tbs. brown sugar 1 Tbs. melted butter 1/4 cup finely chopped walnuts 1/4 cup golden raisins 1 tsp. ground cinnamon 2 sheets puff pastry Flour as needed 1 egg, beaten White sugar Preparation: Add 3 cups water and 1 cup sugar to medium saucepan to make a simple syrup. Stir to dissolve sugar and bring to a low boil over medium high heat. Reduce heat. Peel and core 4 apples and simmer, covered, in syrup until tender, about 20 minutes. Remove apples from syrup and allow to cool. Cook syrup over medium heat until reduced by half. Reserve syrup to serve with apples. To make the stuffing, combine 2 tablespoons brown sugar, 1 tablespoon melted butter, 1/4 cup finely chopped walnuts, 1/4 cup golden raisins and 1 teaspoon ground cinnamon in a small bowl. When apples are cool enough to handle, pack cores with stuffing. Put 2 sheets puff pastry sheets onto floured board. Dust tops with additional flour if pastry is moist. Cut sheets into 1/2-inch strips, reserving a 1-2 inch wide piece of pastry for making decorative leaves. Wrap each stuffed apple with 3 strips of puff pastry. Begin by positioning 1 end of each strip at the bottom of the apple. Wrap the strip all the way around until the other ends meets at the bottom. Repeat for each strip. Cut a decorative leaf for each apple from the remaining puff pastry. Beat 1 egg and brush on top of the puff pastry and sprinkle with white sugar. Bake apples in a preheated 400-degree oven 20 to 25 minutes until the pastry is golden brown. Serve with reserved syrup.
