    Ingredients:

    4 Tbs. vegetable oil
    2 cups diced onions
    1/2 cup celery, medium diced
    2 carrots, medium sliced
    2 parsnips, medium diced
    2 lbs. stew meat, trimmed and medium diced
    1/2 cup flour
    2 Tbs. chopped garlic
    1 cup tomato sauce
    1 cup red wine
    1 tsp. each of salt and fresh ground black pepper
    1 quart beef stock
    2 bay leaves
    1 sprig fresh thyme
    1 lb. potatoes, scrubbed, unpeeled and medium diced

    Heat a large skillet to medium heat. Add 2 tablespoons oil and saute onions, carrots, celery and parsnips until slightly caramelized. Remove vegetables and set aside.

    Mix stew beef with flour, salt and pepper. Brown in remaining 2 tablespoons oil. Add chopped garlic and sweat for 1 minute. Add tomato sauce and red wine and reduce for 1 minute. Add bay leaves, thyme sprig, and beef broth. Bring to a boil, reduce heat to low, and simmer for 1 hour covered.

    Add vegetables and potatoes and simmer for 1 more hour. Adjust seasoning with salt and pepper. Remove bay leaf and the thyme sprig.

    Serve in a pumpkin tureen which has been cleaned out (figure A). The outside can be decorated with bas relief, or with magic marker. (A bat pattern is provided, above.)
